Cake and pie: what is the difference?

June 26, 2026 - pdf

Cake vs. Pie

Cake and pie are both common desserts, but they are built differently. The easiest way to tell them apart is to look at their structure.

A cake is usually made from a batter that rises as it bakes. It often has a soft, fluffy crumb and may be frosted, layered, or decorated. Birthday cakes, sponge cakes, and chocolate cakes all follow this basic idea.

A pie is centered on a crust and a filling. The crust is usually made from pastry dough, and the filling may be sweet or savory. Apple pie, pumpkin pie, chicken pot pie, and lemon meringue pie all depend on the crust plus filling structure.

  • Use cake when the main body is baked batter: She made a vanilla cake with buttercream frosting.
  • Use pie when the food has a pastry shell or crust with filling: He brought a cherry pie to the picnic.

The contrast is not just about flavor. A chocolate dessert can be a cake if it is made from batter, but a chocolate cream dessert in a pastry crust is a pie. Likewise, not every pie is sweet, since savory pies are common in many cuisines.

Quick rule: if the dessert is mostly crumb, think cake. If it is mostly crust and filling, think pie.
